- 250 gm pork shoulder cut in small pieces
- Vegetable Oil of your choice – 4 tbsp
- 1 red onion, sliced
- 1-2 chillies (optional)
- 3 tablespoons cider vinegar
- Salt to taste
Marinate the pork in half the vegetable oil, vinegar, spice mix, ¼ cup water & 1 tsp salt. Refrigerate for 2- 3 hours.
Heat the rest of the oil in a heavy bottomed pan on gentle heat & sauté the marinated pork for 5 minutes. Add sliced onions & sauté for another 5 mins. Add salt to taste and 4 cups of water. Cook uncovered for 10 minutes. Cover & simmer for 45 mins. Check every 10-15 mins and add more hot water if required. When done, the sauce should be thick & the pork well cooked. Add sliced chillies if using & mix well.
Enjoy with warmed pita bread, brown rice or basmati rice.
